Overview
Headhunter is a Triumph in Destiny 2. It asks for three Boss defeats in any activity.
How to complete
Any activity that contains a boss counts, so the three defeats can come from any combination of activities. Onslaught is one example: its boss waves come after a platforming section, and defeating the boss spawns a reward chest.
